Growing vines is an agricultural art of living, which is both very earthy and very sensitive.  Here, the winegrower faces up to the mineral hardness of the schist, the silvery-blue sky, the grey of the Loire River and the fate of climate change.

PHILOSOPHY

The philosophy of Savennières’ winemakers is to understand the plant: Chenin Blanc and its various rootstocks. Then understand the terroirs and read the landscape: slopes of schist and quartz, hedgerows, the schist and sandstone plateau. Understand how to guide nature in its growth, respect the soil’s life and the indigenous flora.

Savennières winegrowers are looking for balance. Be it balance in the appellation's wooded environment, balance in nature, and balance in the relationship between humans, plants and animals (sheep graze in winter, horses work on some estates). Balance again when it comes to finding the perfect symbiosis between the terroir of each plot and the plant. Balance, too, when it comes to determining the harvest date: the ideal ripeness of the grape skins to either preserve the minerality and tension of the wines or to achieve an exceptional concentration of sugars.

As a rule, the musts are not handled very much, and ferment quite naturally in the depths of the cellars to become authentic wines, thanks to the remarkable chenin grape variety, reveal these places, these winemakers.
